Sausage & Broccolini Pasta

It was a steamy day yesterday…and unfortunately that doesn’t mean that I was in a lovely sunny tropical place.   I tackled the dreaded, long delayed task of steam cleaning my carpets.  Four hours of steam cleaning left me exhausted but with a great feeling of accomplishment.

It also meant that I wanted a simple comforting meal on a windy rainy Sunday evening…we had some sausages in the freezer that needed to be eaten so using them as inspiration, I came up with a great new pasta sauce recipe.

Sausage & Broccolini Pasta (for two)

Remove the casings from two mild pork sausages (I used rosemary flavoured sausage from a local butcher) and cook in a large pan over medium high heat, using a spoon to break up the sausage into small pieces.  Once cooked, remove sausage with a slotted spoon and set aside.  

Turn heat down to medium low and add 1 diced onion and 2 diced garlic cloves to the pan and cook until soft.  Add 500 mL of diced tomatoes (I used tomatoes that I canned a few months ago), the cooked sausage and about 1/2 cup of white wine (you can use water instead if you prefer) and cook together for about 5 minutes.  

In a separate large pot, bring salted water to boil – once boiling, add pasta and cook.  While your pasta is cooking, add about two cups of diced broccolini (stems and leaves) to the sausage and tomato mixture, turn the heat to medium and cover tightly with a lid.  Cook until the broccolini has wilted and mix into the rest of the sauce in the pan.  

Drain your pasta and add to the sauce.  Mix well, top with freshly grated Parmesan and enjoy an easy Sunday night dinner!

This is definitely a recipe you can adapt in many ways – different types of sausage or greens – whatever takes your fancy or what is in your fridge…

    I like to split a chicken in half and roast it over onions and lemons, plus roast potatoes. Guaranteed leftovers for Monday!

      I love roast chicken and I haven’t made one in months so this is a great reminder…I usually roast it whole stuffed with lemons and rosemary but may try your version out. Thanks for sharing!
